On the hotel’s ground-floor lobby is Jerónimo, a restaurant by the famed Mexican chef Enrique Olvera that offers an extensive masa and mezcal program, a complementary eatery to Muñoz’s rooftop pisco bar, the first of its kind in the city and the chef’s first-ever venue in Spain. Not only does Oroya offer a relaxed tapas menu with family-style sharing plates and Peruvian staples like sea bass ceviche, fried papas rellenas croquettes, and ha-kao dumplings served with spicy parihuela seafood broth, but the restaurant also conveys some of Peru’s cultural history, which spans influences from Spain, Africa, Italy, China, and Japan. Each dish is made to pair perfectly with the star of the show: Pisco, Peru’s national spirit, which is made through a process of distilling wine into a pure grape liquor in an ancestral process that dates back to the 17th century.
